Now that’s a frittata….
- 5 eggs
- 2 tbs heavy cream or milk
- salt pepper
- ½ cup shredded cheese (optional)
- 2½ cups leftover anything (I usually saute veggies and cook proteins if working with raw ingredients )
- Examples:
- leftover mexican
- leftover chinese
- leftover pizza, chop into 2/4 inch cubes
- leftover seafood is a favorite.
- Move rack in over 5" - 6" from the broiler and set to high
- Coat a 10" non stick frying pan with spray EVO, preheat over medium burner
- Whisk eggs and cream in a bowl and and add salt and pepper
- Pour eggs in the pan and leave undisturbed for 1 minute
- Add leftovers spooning them into the eggs, make sure to leave some space for the egg.
- continue cooking over medium heat until you see small bubble coming through the egg, 3-4 minutes.
- sprinkle cheese on top and place in broiler for 3 minutes.

Pixie2 – A $10 QRP Transceiver! Although most of the QRP circuits today have evolved into using superhet receivers, a diversion back to direct conversion is not unusual…since QRP, after all, is a unique part of amateur radio and simplicity is certainly a part of it. The Pixie 2 is a tiny rig, with a standard two transistor transmitter. It’s a Colpitts oscillator, left running, and a keyed power amplifier.
