Now that's a frittata....
 
 
This is a fast and amazing breakfast. Perfect for a relaxed Sunday. I usually cut frittata into 4 servings reserving two portions for breakfast sandwiches

Ingredients
  • 5 eggs
  • 2 tbs heavy cream or milk
  • salt pepper
  • ½ cup shredded cheese (optional)
  • 2½ cups leftover anything (I usually saute veggies and cook proteins if working with raw ingredients )
  • Examples:
  • leftover mexican
  • leftover chinese
  • leftover pizza, chop into 2/4 inch cubes
  • leftover seafood is a favorite.
Instructions
  1. Move rack in over 5" - 6" from the broiler and set to high
  2. Coat a 10" non stick frying pan with spray EVO, preheat over medium burner
  3. Whisk eggs and cream in a bowl and and add salt and pepper
  4. Pour eggs in the pan and leave undisturbed for 1 minute
  5. Add leftovers spooning them into the eggs, make sure to leave some space for the egg.
  6. continue cooking over medium heat until you see small bubble coming through the egg, 3-4 minutes.
  7. sprinkle cheese on top and place in broiler for 3 minutes.
