Spicy Shrimp, Celery, and Cashew Stir-fry
 
1. Always rinse rice before cooking - it keeps it from becoming a gelatinous mass. 2. HOT is important, timing is really nice in this recipe. A big part of its success. 3. Lots of heat with two peppers, use ½ - 1 for a medium version

Ingredients
  • 1 tablespoon soy sauce
  • 1 tablespoon dark sesame oil
  • 1 tablespoon Shao Hsing rice cooking wine
  • 1 -inch piece peeled fresh ginger
  • 3 cloves garlic (SUB garlic paste)
  • ½ to 1 teaspoon crushed red pepper flakes (SUB two dried red chili peppers)
  • 2 tablespoons vegetable oil
  • 4 ribs celery, thinly sliced (about 3 cups) (SUB added about 5)
  • ¾ cup roasted salted cashews (4 ounces)
  • 2 pinches kosher salt (use less small pinch for veg, sm pinch for shrimp)
  • 1 pound peeled and cleaned medium shrimp
  • 3 scallions, thinly sliced white and green, separated (SUB did not have)
Instructions
  1. Mix the soy sauce, sesame oil and wine, in a medium bowl, set aside. Mince the ginger, garlic, and red pepper flakes in a mini chopper.
  2. Heat a large nonstick skillet over high heat until very hot, about 2 minutes. Add 1 tablespoon of the vegetable oil, the celery and cashews. Season with ¼ teaspoon salt, and stir-fry until the celery turns jade green, about 3 minutes. Transfer the mixture to a plate.
  3. Return the skillet to high heat. Add the remaining 1 tablespoon oil, the shrimp and the remaining ½ teaspoon salt, and stir-fry until shrimp turn pink and curl up, about 2 minutes. Add the ginger-garlic mixture and the scallion whites, and stir-fry until fragrant, about 1 minute. Return the celery and cashews to the pan with most of the scallion greens and the reserved soy sauce mixture and stir over the heat for about 1 minute to mix together evenly and blend flavors. Mound the mixture on a platter and garnish with the remaining scallion greens.

When Caroline Eisenmann, a young assistant at a New York literary agency, decided to rename her OkCupid profile, she wanted something that would make her stand out—a name that wouldn’t get lost amongst the omnipresent references to indie bands and cute animals, something that was “flippant” but with “a bit of a melancholic undertone” that would attract a suitably urbane mate, Eisenmann told me. Fingers poised over the keyboard, she wrote:

OkCupid rejected it. That it wouldn’t accept the lopsided, grinning face with upturned palms is almost strange: ¯\_(ツ)_/¯ is, and was, part of the language of the internet, and it has been popping up more than ever in tweets, work emails, and gchats from friends.

The shruggie or “smugshrug,” as it is sometimes called, is what’s known as a “kaomoji,” or “face mark” in Japanese. It’s similar to an emoji or emoticon, but it incorporates characters from the katakana alphabet, instead of underscores and carets, for a wider range of expression. (The (╯°□°)╯︵ ┻━┻ table flip is a favorite.) It went viral in English when, after Kanye West shot down Taylor Swift in favor of Beyonce during his infamous 2010 Video Music Awards interruption, he gave a little shrug with his hands outstretched in a slight acknowledgement of his own ridiculousness; the rap crew Travis Porter immediately tweeted, “Kanye shrug —> ¯\_(ツ)_/¯” as a crude representation of the gesture. For a time, post-Kanye, ¯\_(ツ)_/¯ continued to represent a kind of self-aware victory over the world: It was appropriated as the victory trademark of SeleCT, a competition-level Starcraft II player from Team Dignitas, after which it became known as “sup son,” and by late 2011, it wasparodied on YouTube by Starcraft competition announcers and plastered on signs held up by fans.

After seeing the light of ¯\_(ツ)_/¯, it’s hard to not notice it everywhere. Han Solo makes the gesture in Star Wars, as Reddit noticed in 2012. Daily Dot writer Miles Klee caught the Spider-Man super villain Mysterio doing it. In 2013, it appeared in a Reddit post that commanded users “lol idk just upvote.” “Lol idk” seems like a fairly apt description of the shruggie’s meaning, but it also doesn’t begin to describe the nihilism that ¯\_(ツ)_/¯ embodies today.

Chickpea Curry

Chickpea Curry
 
Adjust spices to your taste, I never really measure so quantity is estimated - Curry and pepper can vary quite a bit. Enjoy!

Ingredients
  • 2 cans chick pea - reserve liquid from 1 can
  • 3 small white onion chopped
  • 4 cloves garlic minced
  • 1 can chopped tomato
  • 1 bag of fresh spinach
  • salt (to taste)
  • 1 tbs. curry powder (i used ½ Pensky Madras style hot curry and ½ tbs Pensky sweet curry)
  • ½ tbs Garam Masala
  • 1 tbs. Cumin
  • ⅛ tsp hot pepper - cyanne or aleppo pepper to taste.
  • 2-3 tbs extra virgin olive oil (evo)
Instructions
  1. Saute garlic and onion in evo over medium heat in a large frying pan until slightly sofened about 4 minutes.
  2. Add dry seasonings mix throughly and allow to marry for about 30 seconds.
  3. Add drained chickpea and saute for 2 minutes.
  4. Add tomatoes and mix. top with spinach and cover until spinach wilts. 5 min?
  5. Continue to cook on medium heat adding water if the mixture drys out.
  6. Cook unlit chickpeas are soften to your liking.
  7. Serve over your favorite rice - enjoy!

 

Smoke Daddy

I just purchased a new grill. And I’ve been on a quest for the perfect smoker for several years.  I think I’ve found the perfect accessory for my charcoal smoker and my new propane grill.  The Smoke Daddy!  The Smoke Daddy uses the Venturi effect to generate smoke from wood chips or pellets.

I think I’ll be opting for the Big Kahuna

2014 Hamvention

Rain, hail, and good times at the 2014 Hamvention. I was able to attend Friday and Saturday and enjoyed both days. The big purchase was a buddipole and a few antenna accessories.
